The UMF quality mark assesses the key signature markers, confirming measured levels of methylglyoxal (MGO), Dehydroxymethylfurfural (DHA) and Leptosperin. Initially identified as the components giving Manuka honey its unique antibacterial properties, the UMF rating is directly linked to the amount of MGO found.
